Ingredients
Scale
For the Sandwiches:
- 2 cups cereal (e.g., Rice Krispies, Fruity Pebbles, or Cocoa Pebbles)
- 2 cups vanilla ice cream (or your favorite flavor)
- 1/4 cup mini chocolate chips or sprinkles (optional, for extra decoration)
Instructions
- Prepare the Cereal:
- Place the cereal in a large bowl and crush it slightly with your hands or a rolling pin, keeping it crunchy but smaller. This will make it easier to coat the ice cream later.
- Scoop and Shape the Ice Cream:
- Let the vanilla ice cream soften for a few minutes at room temperature.
- Scoop about 2 tablespoons of ice cream and flatten it slightly into a round shape. You can use a cookie cutter or the back of a spoon to create uniform shapes if you prefer.
- Repeat this step to make as many ice cream rounds as you need, depending on how many sandwiches you want to make.
- Assemble the Sandwiches:
- Take one ice cream round and place it on top of one of the cereal-coated sides. Gently press the two together, making sure the ice cream stays intact and the cereal sticks to the sides.
- Repeat for the remaining ice cream rounds and cereal pieces.
- Add Toppings (Optional):
- Roll the edges of each sandwich in mini chocolate chips or sprinkles if desired, adding extra texture and fun color.
- Freeze the Sandwiches:
- Place the assembled cereal ice cream sandwiches on a tray lined with parchment paper. Freeze for at least 30 minutes to set the ice cream before serving.
- Serve and Enjoy:
- Once the ice cream is firm and the sandwiches are set, remove them from the freezer and serve immediately. Enjoy these deliciously fun treats!
Notes
- You can use any kind of cereal to customize the flavor and color of your ice cream sandwiches. Try chocolate cereals for a rich twist or fruity cereals for a pop of color.
- These can be made ahead of time and stored in the freezer for up to a week.
- If you’re not a fan of ice cream, you can substitute frozen yogurt or sorbet for a lighter version.
