Description

Deliciously moist and savory-sweet, these cornbread muffins are made with sharp cheddar cheese and diced apples, then served with a luscious maple sage butter that enhances their rich flavors.

Ingredients

Scale

Muffins

  • 2 tablespoons butter
  • 8 oz apples, diced
  • Pinch of salt
  • 1 cup medium stone ground cornmeal
  • 1 cup all-purpose flour
  • ¼ cup light brown sugar
  • 1 teaspoon salt
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 2 large eggs
  • ½ cup neutral-flavored oil
  • 1 cup milk
  • 6 oz shredded cheddar cheese

Maple Sage Butter

  • 2 sticks butter, softened
  • 12 large sage leaves, finely chopped
  • 2 tablespoons maple syrup
  • Pinch of salt

Instructions

  • Preheat Oven: Preheat to 375°F. Grease a 12-cup muffin tin with oil or line with parchment muffin liners.
  • Caramelize Apples: In a sauté pan over medium heat, melt butter. Add diced apples and a pinch of salt, sautéing for 5-6 minutes until slightly caramelized. Set aside to cool.
  • Mix Dry Ingredients: In a large bowl, whisk together cornmeal, flour, brown sugar, salt, baking powder, and baking soda.
  • Mix Wet Ingredients: In another bowl, beat eggs, then whisk in the oil and milk until fully combined.
  • Combine and Fold: Add wet ingredients to dry ingredients, whisking until smooth. Fold in caramelized apples and shredded cheddar cheese.
  • Bake: Evenly distribute the batter into the prepared muffin tin. Bake for 20 minutes, or until golden and cooked through.
  • Prepare Butter: While muffins bake, combine softened butter, chopped sage, maple syrup, and a pinch of salt in a stand mixer with the paddle attachment. Whip until well combined.
  • Serve: Keep the butter at room temperature and serve spread on warm or room-temperature muffins.

Notes

  • For extra flavor, consider adding chopped walnuts or pecans to the muffin batter.
