Description

A savory and slightly sweet pie filled with fresh corn, sharp cheddar cheese, and a fluffy egg base—perfect as a side dish or vegetarian main.


Ingredients

  • 1 tablespoon butter
  • 1/2 cup chopped onion
  • 2 cups fresh or frozen corn kernels
  • 3 large eggs
  • 1/2 cup whole milk
  • 1/2 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon smoked paprika (optional)
  • 1 tablespoon chopped fresh chives or parsley (optional)
  • 1 pre-made 9-inch pie crust


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the pie crust into a 9-inch pie dish and set aside.
  3. In a skillet, melt butter over medium heat. Add chopped onion and sauté until soft, about 5 minutes.
  4. Add the corn and cook for another 3–4 minutes. Remove from heat and let cool slightly.
  5. In a mixing bowl, whisk together eggs, milk, and cream. Stir in salt, pepper, and smoked paprika if using.
  6. Add the sautéed onion and corn mixture, followed by the cheddar cheese. Mix until well combined.
  7. Pour the mixture into the prepared pie crust and smooth the top. Sprinkle with herbs if desired.
  8. Bake for 35–40 minutes, or until the center is set and the top is golden brown.
  9. Let cool for 10 minutes before slicing and serving.

Notes

  • Fresh corn gives the best texture, but frozen or canned corn can be used in a pinch (drain well).
  • Add chopped jalapeños or red bell pepper for a flavor twist.
  • Great served warm or at room temperature—ideal for brunch or picnics.
