- 1 tablespoon butter
- 1/2 cup chopped onion
- 2 cups fresh or frozen corn kernels
- 3 large eggs
- 1/2 cup whole milk
- 1/2 cup heavy cream
- 1 cup shredded sharp cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon smoked paprika (optional)
- 1 tablespoon chopped fresh chives or parsley (optional)
- 1 pre-made 9-inch pie crust
Instructions
- Preheat the oven to 375°F (190°C).
- Place the pie crust into a 9-inch pie dish and set aside.
- In a skillet, melt butter over medium heat. Add chopped onion and sauté until soft, about 5 minutes.
- Add the corn and cook for another 3–4 minutes. Remove from heat and let cool slightly.
- In a mixing bowl, whisk together eggs, milk, and cream. Stir in salt, pepper, and smoked paprika if using.
- Add the sautéed onion and corn mixture, followed by the cheddar cheese. Mix until well combined.
- Pour the mixture into the prepared pie crust and smooth the top. Sprinkle with herbs if desired.
- Bake for 35–40 minutes, or until the center is set and the top is golden brown.
- Let cool for 10 minutes before slicing and serving.
Notes
- Fresh corn gives the best texture, but frozen or canned corn can be used in a pinch (drain well).
- Add chopped jalapeños or red bell pepper for a flavor twist.
- Great served warm or at room temperature—ideal for brunch or picnics.
