Description

Cheese Quesadillas are a delicious and versatile dish, perfect for any meal of the day. This recipe combines freshly grated Monterey Jack and mild cheddar cheeses melted between flour tortillas, resulting in a crispy, gooey treat. Ideal for lunch, dinner, or as an appetizer.

  • 1 ½ cups freshly grated Monterey Jack cheese
  • 1 ½ cups freshly grated mild cheddar cheese
  • Up to 4 tbsp avocado or canola oil, separated
  • 8 flour tortillas

Instructions

  • Prepare Cheese:
    • In a small mixing bowl, combine the grated Monterey Jack and cheddar cheeses. Set aside.
  • Cook Quesadillas:
    • Heat a skillet over medium-low heat and add a light drizzle of oil.
    • Place a tortilla in the pan, scatter ¼ cup of cheese over half of the tortilla. Once the cheese begins to melt and the tortilla bubbles up (about 1 minute), fold the bare side over the cheese. Press down with a spatula until the cheese has fully melted, about 1 minute more.
    • Repeat with the remaining tortillas, adding more oil to the pan as needed.
  • Serve:
    • Cut the quesadillas into halves or quarters and serve hot.
