- 1 ½ cups freshly grated mild cheddar cheese
- Up to 4 tbsp avocado or canola oil, separated
- 8 flour tortillas
Instructions
- Prepare Cheese:
- In a small mixing bowl, combine the grated Monterey Jack and cheddar cheeses. Set aside.
- Cook Quesadillas:
- Heat a skillet over medium-low heat and add a light drizzle of oil.
- Place a tortilla in the pan, scatter ¼ cup of cheese over half of the tortilla. Once the cheese begins to melt and the tortilla bubbles up (about 1 minute), fold the bare side over the cheese. Press down with a spatula until the cheese has fully melted, about 1 minute more.
- Repeat with the remaining tortillas, adding more oil to the pan as needed.
- Serve:
- Cut the quesadillas into halves or quarters and serve hot.
