Ingredients
-
For the Cookie Dough:
-
1 cup unsalted butter, softened
-
1 cup brown sugar, packed
-
2 teaspoons vanilla extract
-
2 1/4 cups all-purpose flour
-
1/2 teaspoon baking soda
-
1/4 teaspoon salt
-
1 cup mini chocolate chips
For the Cheesecake Filling:
-
8 oz cream cheese, softened
-
1/2 cup powdered sugar
-
1/2 teaspoon vanilla extract
-
1 egg
-
1 tablespoon all-purpose flour
For the Topping:
-
2 tablespoons melted butter
-
1 tablespoon brown sugar
-
1/4 teaspoon ground cinnamon
-
Instructions
-
Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan or bundt pan.
-
Prepare the cookie dough: In a large mixing bowl, beat the softened butter and brown sugar until creamy. Add the vanilla extract and beat again. Gradually mix in the flour, baking soda, and salt until a dough forms. Stir in the mini chocolate chips. Set aside.
-
Prepare the cheesecake filling: In a separate bowl, beat the softened cream cheese and powdered sugar together until smooth. Add the vanilla extract, egg, and flour. Beat until fully combined.
-
Assemble the cake: Take spoonfuls of the cookie dough and flatten them into discs. Layer the cookie dough discs into the prepared pan, layering them with the cheesecake filling in between. Repeat until the pan is full.
-
Prepare the topping: In a small bowl, mix together the melted butter, brown sugar, and cinnamon. Drizzle this mixture over the assembled cake.
-
Bake: Place the cake in the oven and bake for 40–45 minutes, or until the top is golden brown and the cake is cooked through (a toothpick inserted should come out clean). If the top is browning too quickly, cover loosely with foil and continue baking.
-
Cool and serve: Let the cake cool for 10–15 minutes before serving. Pull apart the pieces to enjoy the gooey cheesecake and cookie dough layers!
Notes
-
For an extra indulgent touch, drizzle with chocolate syrup or caramel sauce when serving.
-
You can also add chopped nuts to the cookie dough for a bit of crunch.
-
This cake is best enjoyed warm and gooey but can be stored in an airtight container for up to 3 days.
