Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs and vanilla extract, and beat until combined.
  3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the chocolate chips.
  4. In a medium bowl, beat together the cream cheese, powdered sugar, vanilla extract, flour, and egg yolk until smooth and creamy. This will be the cheesecake filling.
  5. To assemble the cookies, scoop a tablespoon of cookie dough and flatten it into a disc on the prepared baking sheet. Place about 1 teaspoon of the cheesecake filling in the center, then top with another tablespoon of dough and seal the edges, forming a ball around the cheesecake filling.
  6. Place the filled cookie dough balls on the baking sheet, leaving about 2 inches between each one.
  7. Bake for 10–12 minutes or until the edges are golden and the centers are set. The cookies will puff up while baking, and then flatten as they cool.
  8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
