Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs and vanilla extract, and beat until combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the chocolate chips.
- In a medium bowl, beat together the cream cheese, powdered sugar, vanilla extract, flour, and egg yolk until smooth and creamy. This will be the cheesecake filling.
- To assemble the cookies, scoop a tablespoon of cookie dough and flatten it into a disc on the prepared baking sheet. Place about 1 teaspoon of the cheesecake filling in the center, then top with another tablespoon of dough and seal the edges, forming a ball around the cheesecake filling.
- Place the filled cookie dough balls on the baking sheet, leaving about 2 inches between each one.
- Bake for 10–12 minutes or until the edges are golden and the centers are set. The cookies will puff up while baking, and then flatten as they cool.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
