Instructions

  1. Prepare the Apples:
    • Preheat your oven to 350°F (175°C).
    • Slice the top off each apple and carefully core the center, leaving about 1/2 inch of apple around the edges. You can use an apple corer or a paring knife to do this.
    • Place the cored apples in a baking dish. Brush the inside of each apple with lemon juice to prevent browning, then drizzle with melted butter and sprinkle with granulated sugar and cinnamon.
  2. Make the Cheesecake Filling:
    • In a medium mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
    • Add Greek yogurt or sour cream and continue mixing until well combined. If you want a richer filling, you can add whipped cream cheese or heavy cream.
    • Fill each apple with the cheesecake mixture, packing it in gently until the apple is stuffed completely.
  3. Prepare the Crumble Topping:
    • In a small bowl, combine the rolled oats, granulated sugar, flour, and cinnamon.
    • Drizzle with melted butter and stir until the mixture becomes crumbly.
    • Sprinkle the crumble topping evenly over the cheesecake-filled apples.
  4. Bake the Apples:
    • Bake the stuffed apples in the preheated oven for 25-30 minutes or until the apples are tender and the crumble topping is golden brown.
