Description

A Cheesecake Tart is a rich and creamy dessert with a buttery, crisp tart crust, filled with smooth and velvety cheesecake filling. It’s a simple, elegant treat that can be customized with your favorite toppings, such as fresh berries or chocolate drizzle, for a beautiful presentation.

  • 1 1/2 cups graham cracker crumbs (or digestive biscuits)
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 2/3 cup sour cream
  • 2 large eggs
  • 1/4 cup heavy cream
  • Fresh berries, chocolate drizzle, or fruit compote for topping (optional)

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until well mixed and the crumbs are evenly coated with butter.
  3. Press the crumb mixture into the bottom and up the sides of a tart pan (9-inch) to form the crust. Use the back of a spoon or your fingers to press it down firmly.
  4. Bake the crust for 8-10 minutes, or until golden brown. Let it cool while you prepare the filling.
  5. In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add the powdered sugar and vanilla extract, and continue to beat until well combined.
  6. Add the sour cream and heavy cream, and mix until smooth. Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next.
  7. Pour the cheesecake filling into the cooled crust, smoothing the top with a spatula.
  8. Bake for 45-50 minutes, or until the edges are set, and the center is just slightly jiggly (it will firm up as it cools).
  9. Allow the cheesecake tart to cool completely in the pan on a wire rack. Once cooled, refrigerate for at least 4 hours, or overnight, for the best texture.
  10. Before serving, top with fresh berries, a drizzle of chocolate, or fruit compote as desired.

Notes

  • If you prefer a gluten-free crust, use gluten-free graham crackers or crushed gluten-free cookies.
  • You can also add lemon zest or a bit of orange zest to the filling for an extra citrusy twist.
