- 1 1/2 cups graham cracker crumbs (or digestive biscuits)
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 2/3 cup sour cream
- 2 large eggs
- 1/4 cup heavy cream
- Fresh berries, chocolate drizzle, or fruit compote for topping (optional)
Instructions
- Preheat the oven to 325°F (163°C).
- In a bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until well mixed and the crumbs are evenly coated with butter.
- Press the crumb mixture into the bottom and up the sides of a tart pan (9-inch) to form the crust. Use the back of a spoon or your fingers to press it down firmly.
- Bake the crust for 8-10 minutes, or until golden brown. Let it cool while you prepare the filling.
- In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add the powdered sugar and vanilla extract, and continue to beat until well combined.
- Add the sour cream and heavy cream, and mix until smooth. Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next.
- Pour the cheesecake filling into the cooled crust, smoothing the top with a spatula.
- Bake for 45-50 minutes, or until the edges are set, and the center is just slightly jiggly (it will firm up as it cools).
- Allow the cheesecake tart to cool completely in the pan on a wire rack. Once cooled, refrigerate for at least 4 hours, or overnight, for the best texture.
- Before serving, top with fresh berries, a drizzle of chocolate, or fruit compote as desired.
Notes
- If you prefer a gluten-free crust, use gluten-free graham crackers or crushed gluten-free cookies.
- You can also add lemon zest or a bit of orange zest to the filling for an extra citrusy twist.
