Ingredients

  • 1 lb beef sirloin or ribeye, thinly sliced
  • 1 tbsp olive oil
  • 1 medium onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 3 cloves garlic, minced
  • Salt and pepper, to taste
  • 1 (20 oz) package cheese tortellini (fresh or frozen)
  • 1 cup heavy cream
  • 1 cup provolone cheese, shredded
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook Tortellini: Cook the tortellini according to package instructions. Drain and set aside.
  • Sauté Steak and Vegetables: Heat olive oil in a large skillet over medium-high heat. Add the sliced beef, season with salt and pepper, and cook until browned. Remove the beef from the skillet and set aside.
  • Cook Vegetables: In the same skillet, add onions, bell peppers, and garlic. Sauté until vegetables are tender and onions are translucent, about 4-5 minutes.
  • Make Provolone Sauce: Lower heat to medium. Add the heavy cream to the skillet, stirring to incorporate the flavors. Slowly add provolone, mozzarella, and Parmesan cheeses, stirring constantly until melted and smooth.
  • Combine Ingredients: Add the cooked tortellini and beef back to the skillet. Stir to coat everything evenly in the creamy provolone sauce.
  • Serve: Garnish with fresh parsley and serve hot. Enjoy!
