- 2 cups shredded cheddar cheese (divided)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste

Instructions
- Prepare the Chicken: Preheat the oven to 350°F (175°C). Heat a tablespoon of olive oil in a skillet over medium heat. Season the chicken breasts with salt, pepper, garlic powder, and onion powder. Cook the chicken in the skillet for 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set it aside to cool slightly. Once cooled, dice the chicken into bite-sized pieces.
- Prepare the Casserole: In a large mixing bowl, combine the cream of chicken soup, cream of mushroom soup, chicken broth, sour cream, and 1 1/2 cups of shredded cheddar cheese. Stir until well-combined. Add the uncooked rice to the mixture and stir until the rice is evenly coated. Season with salt and pepper to taste.
- Assemble the Casserole: Spread the chicken evenly in the bottom of a 9×13-inch casserole dish. Pour the rice mixture over the chicken and spread it out evenly. Cover the casserole dish with aluminum foil.
- Bake: Bake in the preheated oven for 45 minutes. After 45 minutes, remove the foil and sprinkle the remaining 1/2 cup of shredded cheddar cheese on top. Return the casserole to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the rice is tender.
- Serve: Let the casserole cool for a few minutes before serving. Garnish with chopped fresh parsley, if desired.
