Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 tablespoon olive oil

  • 1 packet fajita seasoning mix (or homemade fajita seasoning)

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon chili powder

  • 1/2 teaspoon cumin

  • Salt and pepper, to taste

  • 1 bell pepper, sliced

  • 1 red onion, sliced

  • 1 cup shredded cheddar cheese (or Mexican blend cheese)

  • Fresh cilantro, for garnish (optional)

  • Lime wedges, for serving


Instructions

  1. Prep the chicken:
    Preheat your oven to 375°F (190°C). Place the chicken breasts on a baking sheet and drizzle with olive oil. Season the chicken with fajita seasoning, garlic powder, onion powder, chili powder, cumin, salt, and pepper. Rub the seasoning into the chicken so it’s well coated.

  2. Prepare the veggies:
    Scatter the sliced bell pepper and red onion around the chicken on the baking sheet.

  3. Bake the chicken:
    Bake the chicken and vegetables for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and is no longer pink in the center. The vegetables should be tender and slightly caramelized.

  4. Add the cheese:
    Once the chicken is cooked through, remove the baking sheet from the oven and sprinkle the shredded cheese over the chicken breasts. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.

  5. Serve:
    Remove the chicken from the oven and let it rest for a few minutes. Garnish with fresh cilantro and serve with lime wedges on the side. You can also serve it with tortillas, rice, or a simple salad.
