Ingredients

  • 2 medium yellow squash or zucchini
  • 1 cup shredded cheese (cheddar, parmesan, or a mix)
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika (optional)
  • Salt & pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the squash into 1/4-inch rounds.
  3. Toss with olive oil, garlic powder, salt, and pepper.
  4. Arrange on a baking sheet lined with parchment paper.
  5. Sprinkle cheese evenly over each round.
  6. Bake for 12-15 minutes until cheese is bubbly and golden.
