These Cheesy Beef Burritos with Fries combine all your favorite comfort foods in one delicious dish. A warm, cheesy beef filling wrapped in a soft tortilla and served with crispy fries on the side. Perfect for a family dinner or a fun taco night, these burritos are sure to be a hit!

Ingredients

Scale

For the Burritos:

  • 1 lb ground beef
  • 1 packet taco seasoning (or homemade seasoning)
  • 1/4 cup water
  • 1 cup shredded cheddar cheese (or Mexican blend cheese)
  • 1/2 cup sour cream
  • 1/4 cup salsa
  • 4 large flour tortillas
  • 1/2 cup diced onions (optional)
  • 1/2 cup chopped fresh cilantro (optional)
  • 1/4 cup pickled jalapeños (optional)

For the Fries:

  • 4 large potatoes, cut into fries (or 1 bag of frozen fries)
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh parsley (optional, for garnish)

Instructions

For the Fries:

  1. Preheat Oven: Preheat your oven to 425°F (220°C).
  2. Prepare Fries: If using fresh potatoes, cut them into thin fries and toss them in olive oil, paprika, garlic powder, salt, and pepper. Spread the fries in a single layer on a baking sheet.
  3. Bake Fries: Bake the fries for 25-30 minutes, flipping halfway through, until they are crispy and golden brown. (If using frozen fries, follow package instructions for baking.)

For the Burritos:

  1. Cook Beef: In a large skillet over medium heat, cook the ground beef until browned and fully cooked, breaking it apart with a spoon as it cooks. Drain any excess grease.
  2. Season the Beef: Add the taco seasoning and water to the cooked beef, and stir to combine. Let it simmer for 3-4 minutes, or until the sauce thickens and is well-coated on the beef.
  3. Assemble Burritos: Lay the flour tortillas flat on a clean surface. Spread a small amount of sour cream on each tortilla. Add a generous amount of the seasoned beef mixture, top with shredded cheese, and add salsa, onions, cilantro, and jalapeños if using.
  4. Roll Up Burritos: Fold in the sides of the tortillas and roll them up tightly, ensuring the filling stays secure.
  5. Serve: Serve the cheesy beef burritos with the crispy fries on the side. Garnish with extra cilantro or parsley if desired.

Notes

  • You can make this recipe spicier by adding more jalapeños or hot sauce to the beef mixture.
  • Feel free to add other toppings like guacamole, lettuce, or diced tomatoes for extra freshness.
  • If you’re short on time, frozen fries are a great shortcut to complete the meal quickly.
  • For a lighter version, you can use ground turkey or chicken instead of beef.
