- 1 lb (450g) ground beef
- 6 medium potatoes, peeled and sliced
- 1 medium onion, diced
- 2 cups shredded cheddar cheese
- 1 can (10.5 oz) cream of mushroom soup
- 1/2 cup milk
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add the ground beef and onions, cooking until the beef is browned and onions are softened. Season with salt and pepper. Drain excess grease.
- In a bowl, mix the cream of mushroom soup with milk until well combined.
- In a greased 9×13-inch baking dish, layer half of the sliced potatoes evenly on the bottom. Add half of the beef mixture on top, followed by a layer of cheddar cheese. Repeat with the remaining potatoes, beef mixture, and cheese.
- Pour the soup mixture over the casserole, spreading evenly.
- Cover the baking dish with aluminum foil and bake for 40 minutes.
- Remove the foil and bake for an additional 10-15 minutes, until the cheese is melted and bubbly, and the potatoes are fork-tender.
- Garnish with freshly chopped parsley and serve hot.
Notes
Feel free to substitute ground beef with ground turkey or a mix of vegetables for a lighter or vegetarian version.
