Description
This Cheesy Broccoli Cornbread is a savory twist on classic cornbread, packed with sharp cheddar cheese and tender broccoli. Perfect as a side dish to soups, stews, or just on its own with a bit of butter.
Ingredients
Scale
- 1 box cornbread mix (8.5 oz)
- 1/2 cup milk
- 2 large eggs
- 1/4 cup melted butter
- 1 cup shredded sharp cheddar cheese
- 1 cup broccoli florets, steamed and chopped
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C). Grease or line a 9×9-inch baking dish with parchment paper.
- In a large bowl, prepare the cornbread mix according to the package instructions, adding milk, eggs, and melted butter.
- Stir in the shredded cheddar cheese, steamed and chopped broccoli, garlic powder, onion powder, salt, and pepper. Mix until combined.
- Pour the batter into the prepared baking dish and spread evenly.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
- Let the cornbread cool for a few minutes before cutting into squares and serving.
Notes
- For extra flavor, you can add a pinch of cayenne pepper or red pepper flakes for a bit of heat.
- Feel free to substitute the cheddar with other cheeses like mozzarella or Monterey Jack for a different flavor.
- If you don’t have fresh broccoli, frozen broccoli works well as long as it is thoroughly drained and chopped.
