- 2 cups cooked chicken, shredded
- 1/4 cup buffalo sauce (adjust to taste)
- 1/4 cup ranch dressing
- 1 1/2 cups shredded mozzarella cheese
- 1 1/2 cups shredded cheddar cheese
- 4 flour tortillas
- 1 tablespoon olive oil (for cooking)
- 1/4 cup green onions, chopped (optional)
- Salt and pepper to taste
Instructions
- In a bowl, combine the shredded chicken, buffalo sauce, and ranch dressing. Stir until the chicken is well coated.
- Heat a large skillet over medium heat and add a little olive oil.
- Place one tortilla in the skillet and sprinkle a handful of mozzarella and cheddar cheese on half of the tortilla.
- Layer on the buffalo ranch chicken mixture, then sprinkle with a bit more cheese.
- Fold the tortilla in half and cook until golden brown on each side, about 2-3 minutes per side, pressing lightly to seal.
- Remove from the skillet and repeat with the remaining tortillas and filling.
- Slice the quesadillas into wedges and serve with extra ranch or blue cheese dressing for dipping.
Notes
- For extra heat, you can add some jalapeños or red pepper flakes to the buffalo chicken mixture.
- Use a non-stick skillet or griddle for easy flipping and to prevent the quesadillas from sticking.
