  • 2 cups cooked chicken, shredded
  • 1/4 cup buffalo sauce (adjust to taste)
  • 1/4 cup ranch dressing
  • 1 1/2 cups shredded mozzarella cheese
  • 1 1/2 cups shredded cheddar cheese
  • 4 flour tortillas
  • 1 tablespoon olive oil (for cooking)
  • 1/4 cup green onions, chopped (optional)
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine the shredded chicken, buffalo sauce, and ranch dressing. Stir until the chicken is well coated.
  2. Heat a large skillet over medium heat and add a little olive oil.
  3. Place one tortilla in the skillet and sprinkle a handful of mozzarella and cheddar cheese on half of the tortilla.
  4. Layer on the buffalo ranch chicken mixture, then sprinkle with a bit more cheese.
  5. Fold the tortilla in half and cook until golden brown on each side, about 2-3 minutes per side, pressing lightly to seal.
  6. Remove from the skillet and repeat with the remaining tortillas and filling.
  7. Slice the quesadillas into wedges and serve with extra ranch or blue cheese dressing for dipping.
