Description

Cheesy Burrito Pie is a delicious and easy-to-make casserole packed with all the flavors of a classic burrito. Layers of seasoned ground beef, tortillas, cheese, and a creamy sauce come together to create a mouthwatering meal that’s perfect for dinner or meal prep. This is a crowd-pleasing dish that is guaranteed to be a hit at your next family gathering!

Ingredients

Scale
  • 1 lb ground beef
  • 1 small onion, diced
  • 1 packet (1 oz) taco seasoning mix
  • 1 cup salsa
  • 1/2 cup sour cream
  • 6 medium flour tortillas, cut into quarters
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup refried beans (optional)
  • 1 cup frozen corn (optional)
  • 1 can (4 oz) diced green chilies (optional)
  • Fresh cilantro, chopped (for garnish, optional)

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C). Grease a 9×9-inch baking dish with cooking spray or a little olive oil.

  2. Cook the ground beef: In a large skillet, brown the ground beef over medium heat, breaking it apart with a spoon. Once browned, drain any excess grease. Add the diced onion and cook for 2-3 minutes until softened.

  3. Season the beef: Stir in the taco seasoning mix and salsa. Simmer for about 5 minutes until the mixture thickens. If you’re using refried beans, corn, or diced green chilies, add them now and stir to combine. Remove from heat.

  4. Assemble the burrito pie: Spread a thin layer of the beef mixture on the bottom of the prepared baking dish. Then, place a layer of flour tortilla quarters over the beef. Spread a portion of the beef mixture over the tortillas, followed by a layer of shredded cheddar and Monterey Jack cheese.

  5. Repeat the layers: Repeat the layering process with the remaining tortillas, beef mixture, and cheese until you’ve used all ingredients, finishing with a layer of cheese on top.

  6. Bake: Cover the baking dish with aluminum foil and bake for 20-25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.

  7. Garnish and serve: Once baked, remove from the oven and let it rest for 5 minutes before serving. Garnish with freshly chopped cilantro, if desired.

  8. Enjoy: Serve your Cheesy Burrito Pie with a side of sour cream, salsa, or guacamole for extra flavor!

Notes

  • For a spicier version, add diced jalapeños or a teaspoon of chili powder to the beef mixture.
  • You can make this dish ahead of time and refrigerate it before baking. Just increase the bake time by 10-15 minutes if it’s chilled.
  • Feel free to swap the ground beef for ground turkey or chicken for a leaner version.
