For the bites:
1 head of cauliflower, cut into florets
1/2 cup grated Parmesan cheese
1/2 cup bread crumbs
1/4 cup chopped fresh parsley
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup shredded cheddar cheese
1 egg, beaten
Vegetable oil, for frying
Instructions
- Preheat the oven to 400°F (200°C).
- Place the cauliflower florets in a food processor and pulse until finely chopped.
- Transfer the chopped cauliflower to a large bowl and add the Parmesan cheese, bread crumbs, parsley, garlic powder, salt, and black pepper. Stir until combined.
- Add the cheddar cheese and beaten egg to the bowl, mixing until well combined.
- Form the mixture into 1-inch balls and place them on a greased baking sheet.
- Bake for 15-20 minutes, or until golden brown and crispy.
- Serve with your favorite dipping sauce.
