Ingredients
For the Fritters:
- 2 cups cooked chicken, shredded
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 2 large eggs
- 1/4 cup green onions, chopped
- 1/4 cup fresh parsley, chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- 1 tablespoon olive oil (for frying)
Instructions

Mix the Fritter Ingredients:
In a large mixing bowl, combine the shredded chicken, cheddar cheese, Parmesan cheese, breadcrumbs, eggs, green onions, parsley, garlic powder, onion powder, salt, and pepper. Mix well until everything is combined. -
Shape the Fritters:
Use your hands to form small patties from the mixture, about 2-3 inches in diameter. -
Fry the Fritters:
Heat olive oil in a large skillet over medium heat. Once hot, add the fritters in batches, making sure not to overcrowd the pan.
Fry for about 3-4 minutes on each side until golden brown and crispy. -
Drain and Serve:
Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
Serve with your favorite dipping sauce.
Notes
- Add-ins: Add diced bell peppers, jalapeños, or cooked bacon for extra flavor.
- Baking Option: You can also bake the fritters. Place them on a lined baking sheet and bake at 375°F (190°C) for 15-20 minutes, flipping halfway through.
