Description

These Cheesy Chicken Fritters are the perfect blend of crispy, cheesy, and savory. Loaded with shredded chicken and gooey cheese, they’re a delicious appetizer, snack, or dinner option. Easy to make, these fritters are crispy on the outside and tender on the inside!

Ingredients

Scale

For the Fritters:

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 2 large eggs
  • 1/4 cup green onions, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 tablespoon olive oil (for frying)

Instructions

  1. Mix the Fritter Ingredients:
In a large mixing bowl, combine the shredded chicken, cheddar cheese, Parmesan cheese, breadcrumbs, eggs, green onions, parsley, garlic powder, onion powder, salt, and pepper. Mix well until everything is combined.

  2. Shape the Fritters:
Use your hands to form small patties from the mixture, about 2-3 inches in diameter.

  3. Fry the Fritters:
Heat olive oil in a large skillet over medium heat. Once hot, add the fritters in batches, making sure not to overcrowd the pan.
Fry for about 3-4 minutes on each side until golden brown and crispy.

  4. Drain and Serve:
Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
Serve with your favorite dipping sauce.

Notes

  • Add-ins: Add diced bell peppers, jalapeños, or cooked bacon for extra flavor.

  • Baking Option: You can also bake the fritters. Place them on a lined baking sheet and bake at 375°F (190°C) for 15-20 minutes, flipping halfway through.
