Ingredients
Scale
- 2 boneless, skinless chicken breasts
- 4 slices of thick-cut bread (preferably sourdough or French bread)
- 2 tbsp butter, softened
- 2 cloves garlic, minced
- 1 tbsp fresh parsley, chopped
- 1 tbsp olive oil
- Salt and pepper to taste
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 2 tbsp mayonnaise (optional, for spreading)
- 1/2 tsp paprika (optional, for extra flavor)
- 1 tbsp Parmesan cheese (optional, for sprinkling)
Instructions
- Cook the Chicken: Season the chicken breasts with salt, pepper, and paprika (if using). Heat olive oil in a skillet over medium heat. Cook the chicken for 6-7 minutes per side, or until golden brown and cooked through. Remove from the skillet and set aside to rest.
- Prepare the Garlic Butter: In a small bowl, combine softened butter, minced garlic, and fresh parsley. Mix until fully combined.
- Toast the Bread: Spread the garlic butter mixture generously over one side of each slice of bread. Heat a skillet or griddle over medium heat and place the bread slices, buttered side down, to toast until golden and crispy.
- Assemble the Sandwich: Once the bread is toasted, spread mayonnaise (if using) on the unbuttered side of the bread slices. Slice the cooked chicken breasts and place them on one slice of bread. Top with shredded mozzarella and cheddar cheese.
- Melt the Cheese: Place the sandwich halves back on the skillet, pressing gently, and cook for 2-3 minutes on each side until the cheese is melted and the bread is golden and crispy.
- Serve: Sprinkle the sandwich with a little Parmesan cheese and serve immediately. Enjoy your cheesy, garlicky, chicken-filled sandwich!
Notes
- You can add extra toppings such as lettuce, tomato, or pickles for additional flavor and crunch.
- For a spicy twist, add a drizzle of hot sauce or a few jalapeño slices to the sandwich.
- If you prefer, you can grill the chicken with some Italian seasoning for extra flavor.
- You can make the garlic butter in advance and store it in the refrigerator for a few days.
