  • 2 cups cooked chicken, shredded or diced
  • 1 (12 oz) package egg noodles (or your favorite pasta)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crushed potato chips or breadcrumbs (optional, for topping)
  • 2 tablespoons melted butter (if using chips for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish with non-stick spray or butter.
  2. Cook the egg noodles according to the package instructions, then drain and set aside.
  3. In a large bowl, combine the cream of chicken soup, sour cream, 1 cup cheddar cheese, mozzarella cheese, milk, garlic powder, onion powder, salt, and pepper. Stir until well combined.
  4. Add the cooked chicken and cooked egg noodles to the bowl and mix gently until everything is evenly coated.
  5. Transfer the mixture to the prepared baking dish and spread it into an even layer.
  6. Top with the remaining 1/2 cup cheddar cheese.
  7. If using the potato chip topping, mix the crushed chips with the melted butter and sprinkle over the top of the casserole. Alternatively, you can use breadcrumbs as a topping.
  8. Bake for 25–30 minutes, or until the casserole is hot, bubbly, and golden brown on top.
  9. Remove from the oven and let it cool for a few minutes before serving. Enjoy!

Notes

  • For a lighter version, you can use Greek yogurt instead of sour cream and low-fat versions of the soup and cheese.
  • If you don’t have chicken soup, you can substitute it with cream of mushroom soup for a different flavor.
