- 2 tablespoons taco seasoning
- ¼ cup water
- 1 jar Tostitos Salsa Con Queso
- 1 can potato soup
- 1 ¼ cups sour cream
- 1 can fire roasted diced green chilies
- 1 ¼ cups beef broth
- ½ cup chicken broth
- 1 cup frozen corn
- 1 cup pinto beans or black beans
Instructions
- Brown the ground beef: In a skillet, brown the ground beef over medium heat. Drain any excess fat if needed.
- Add taco seasoning: Stir in the taco seasoning and water. Cook until the water is absorbed.
- Combine ingredients: Transfer the seasoned ground beef to a Dutch oven or large pot. Add the jar of salsa, can of potato soup, sour cream, beef broth, and chicken broth. Stir well until the sour cream is melted and everything is combined.
- Add the vegetables: Stir in the fire roasted diced green chilies, corn, and pinto beans (or black beans).
- Bring to a boil: Stir the mixture and bring to a boil to heat everything through.
- Simmer and serve: Reduce the heat and simmer until you’re ready to serve, stirring often to avoid sticking.
- Serve: Serve with tortilla chips or Fritos for extra crunch and flavor.
