  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced

  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup shredded mozzarella cheese

Instructions

  1. Prepare the Chicken:

    • Season both sides of the chicken breasts with salt and pepper.
    • Heat the olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and cook for 5-6 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F or 74°C). Remove the chicken from the skillet and set it aside.
  2. Make the Garlic Butter Sauce:

    • In the same skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic, thyme, and parsley. Cook for 1-2 minutes, stirring constantly, until the garlic becomes fragrant.
  3. Add Cream and Broth:

    • Stir in the heavy cream and chicken broth. Bring the mixture to a simmer and cook for 3-5 minutes until the sauce slightly thickens. Season with salt and pepper to taste.
  4. Add the Cheese:

    • Lower the heat to medium-low and stir in the shredded mozzarella and Parmesan cheese until fully melted and the sauce is smooth.
  5. Combine Chicken and Sauce:

    • Return the cooked chicken breasts to the skillet and spoon the garlic butter sauce over the top. Sprinkle extra cheese on top if desired, and cover the skillet. Let it cook for another 2-3 minutes, allowing the cheese to melt and the chicken to heat through.
  6. Serve:

    • Garnish with additional parsley if desired. Serve the cheesy garlic butter chicken over pasta, rice, or with steamed vegetables.
