  • 1.5 lbs baby potatoes or small Yukon Gold potatoes, halved

  • 3 tablespoons olive oil

  • 4 cloves garlic, minced

  • 1 teaspoon dried rosemary

  • 1 teaspoon dried thyme

  • 1 teaspoon dried oregano

  • 1/2 teaspoon paprika

  • Salt and black pepper, to taste

  • 1 cup shredded cheddar cheese (or a mix of cheddar and Parmesan)

  • 1 tablespoon fresh parsley, chopped (for garnish)

  • Optional: 2 tablespoons grated Parmesan (for extra cheesy goodness)


Instructions

  1. Preheat the Oven:
    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

  2. Prepare the Potatoes:
    Wash and halve the baby potatoes. Place them in a large mixing bowl.

  3. Season the Potatoes:
    In a small bowl, mix together olive oil, minced garlic, rosemary, thyme, oregano, paprika, salt, and pepper. Pour this mixture over the potatoes and toss until they’re evenly coated.

  4. Roast the Potatoes:
    Spread the seasoned potatoes in a single layer on the prepared baking sheet. Roast for 25–30 minutes, or until the potatoes are golden brown and crispy on the edges. Toss halfway through for even cooking.

  5. Add the Cheese:
    Remove the potatoes from the oven and sprinkle the shredded cheddar cheese (and Parmesan, if using) over the potatoes. Return the baking sheet to the oven and bake for another 5–7 minutes, or until the cheese is melted and bubbly.

  6. Garnish and Serve:
    Once the cheese is melted, remove the potatoes from the oven and garnish with freshly chopped parsley. Serve warm and enjoy!

Notes

  • You can customize the herbs based on your preferences. Fresh rosemary or thyme works well if you have it on hand.

  • For a little extra crunch, broil the potatoes for the last 1–2 minutes of cooking.
