Description

Cheesy Garlic Zucchini Steaks are a flavorful and healthy side dish featuring tender zucchini seared to golden perfection, brushed with a garlicky herb mixture, topped with melty mozzarella and Parmesan, and finished with fresh basil and chili flakes.


Ingredients

  • 2 large zucchinis
  • 1 tsp salt
  • 5 tbsp extra virgin olive oil (divided)
  • 2 cloves garlic, finely chopped
  • 1 tbsp fresh thyme leaves, chopped
  • 2 tbsp finely grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • Fresh basil leaves for garnish
  • Chili pepper flakes for garnish


Instructions

  1. Slice each zucchini lengthwise and score the flesh in a crisscross pattern. Sprinkle with salt and let sit for 10 minutes to draw out moisture. Pat dry with a paper towel.
  2. Heat 1-2 tablespoons of olive oil in a large nonstick pan over medium heat. Place the zucchini flesh-side down and sear for about 5 minutes per side until golden brown.
  3. In a small bowl, combine 3 tablespoons of olive oil with minced garlic, chopped thyme, salt, and pepper. Mix well.
  4. Brush the garlic mixture onto the flesh sides of the seared zucchini steaks. Sprinkle with grated Parmesan cheese. Transfer to the oven or air fryer and cook for an additional 15 minutes.
  5. Remove from the oven and top with shredded mozzarella cheese. Return to the oven for 1-2 minutes until the cheese melts.
  6. Garnish with fresh basil leaves and chili pepper flakes before serving.
