Description

This Cheesy Ground Beef and Rice Casserole is a comforting and hearty meal perfect for busy weeknights. Made with ground beef, rice, and melted cheddar cheese, this dish is sure to be a family favorite.


Ingredients

  • 1 pound ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice, uncooked
  • 2 cups beef broth
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream

Instructions

  • Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  • In a large skillet, cook the ground beef, onion, and garlic over medium heat until browned. Drain excess fat.
  • Stir in the rice, beef broth, diced tomatoes, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat to low and cover. Simmer for 15-20 minutes or until the rice is cooked and liquid is absorbed.
  • Remove from heat and stir in the sour cream and half of the cheddar cheese.
  • Transfer the mixture to the prepared baking dish and top with the remaining cheese.
  • Bake for 25-30 minutes or until the cheese is melted and bubbly. Serve warm.

Notes

You can add extra vegetables like bell peppers or corn for added flavor and texture.
