- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup long-grain white rice, uncooked
- 2 cups beef broth
- 1 can (14.5 ounces) diced tomatoes, drained
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 cups shredded cheddar cheese
- 1/2 cup sour cream
Instructions
- Preheat the Oven: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Cook the Beef Mixture: In a large skillet, cook the ground beef, onion, and garlic over medium heat until browned. Drain excess fat.
- Add Remaining Ingredients: Stir in the rice, beef broth, diced tomatoes, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat to low. Cover and simmer for 15-20 minutes, or until the rice is cooked and liquid is absorbed.
- Stir in Cheese and Sour Cream: Remove from heat and stir in the sour cream and half of the cheddar cheese.
- Bake the Casserole: Transfer the mixture to the prepared baking dish and top with the remaining cheese. Bake for 25-30 minutes, or until the cheese is melted and bubbly.
- Serve Warm: Allow to cool for a few minutes before serving.
