These Cheesy Ground Beef & Veggie Quesadillas are a delicious and easy-to-make meal packed with flavor. Loaded with lean ground beef, colorful veggies, and melted cheese, they make for a perfect weeknight dinner or a crowd-pleasing snack. Serve them with salsa and light sour cream for an extra touch!

- For the Quesadillas:
- 1 lb ground beef (93% lean)
- 1 tbsp oil
- 1 small red bell pepper, diced
- 1 small green bell pepper, diced
- 1/2 medium yellow onion, diced
- 1/2 cup shredded carrots
- 1 packet (1.25 oz) reduced-sodium taco seasoning
- 1 cup shredded Mexican cheese blend
- 8 whole grain tortillas
- Optional Toppings:
- Salsa
- Light sour cream
Instructions
- Sauté Vegetables: Heat oil in a large skillet over medium-high heat. Add bell peppers and onions. Sauté for 10 minutes or until onions start to brown. Add carrots and cook for an additional 5-7 minutes, or until softened. Transfer to a bowl and keep warm.
- Cook Beef: Add ground beef to the skillet and crumble with a spatula. Cook for 8-10 minutes, or until browned. Drain excess fat. Add taco seasoning and cooked vegetables back to the skillet.
- Assemble Quesadillas: Heat another medium skillet over medium-high heat. Place one tortilla in the pan. Layer with 2 tbsp cheese, 1/2 cup beef and veggie mixture, and another 2 tbsp cheese. Top with another tortilla. Repeat to make 4 quesadillas.
- Cook Quesadillas: Cook each quesadilla for 5-7 minutes per side, or until golden brown and crispy.
- Serve: Enjoy with salsa and light sour cream as optional toppings.
