Description

These Cheesy Ground Beef & Veggie Quesadillas are a delicious and easy-to-make meal packed with flavor. Loaded with lean ground beef, colorful veggies, and melted cheese, they make for a perfect weeknight dinner or a crowd-pleasing snack. Serve them with salsa and light sour cream for an extra touch!

  • For the Quesadillas:
    • 1 lb ground beef (93% lean)
    • 1 tbsp oil
    • 1 small red bell pepper, diced
    • 1 small green bell pepper, diced
    • 1/2 medium yellow onion, diced
    • 1/2 cup shredded carrots
    • 1 packet (1.25 oz) reduced-sodium taco seasoning
    • 1 cup shredded Mexican cheese blend
    • 8 whole grain tortillas
  • Optional Toppings:
    • Salsa
    • Light sour cream

Instructions

  • Sauté Vegetables: Heat oil in a large skillet over medium-high heat. Add bell peppers and onions. Sauté for 10 minutes or until onions start to brown. Add carrots and cook for an additional 5-7 minutes, or until softened. Transfer to a bowl and keep warm.
  • Cook Beef: Add ground beef to the skillet and crumble with a spatula. Cook for 8-10 minutes, or until browned. Drain excess fat. Add taco seasoning and cooked vegetables back to the skillet.
  • Assemble Quesadillas: Heat another medium skillet over medium-high heat. Place one tortilla in the pan. Layer with 2 tbsp cheese, 1/2 cup beef and veggie mixture, and another 2 tbsp cheese. Top with another tortilla. Repeat to make 4 quesadillas.
  • Cook Quesadillas: Cook each quesadilla for 5-7 minutes per side, or until golden brown and crispy.
  • Serve: Enjoy with salsa and light sour cream as optional toppings.
