- 1 cup long grain rice (cooked)
- 1/2 yellow onion, diced
- 1–2 cups shredded cheddar or Mexican blend cheese
- 2 cans (10 oz each) cream of mushroom soup
- 1/2 cup sour cream
- Salt and pepper, to taste

- Bell peppers, diced
- Minced garlic
- Green onions, chopped
- Frozen peas, carrots, or spinach for extra nutrition
Instructions
- Cook the Rice: Cook the rice according to the package instructions. Set aside once done.
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Cook the Ground Beef: In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
- Sauté the Onion: Add diced onion (and any optional veggies) to the skillet and sauté until soft.
- Prepare the Creamy Sauce: In a bowl, mix together cream of mushroom soup and sour cream.
- Combine the Ingredients: Stir in cooked rice, ground beef, sautéed onion, and any optional veggies. Season with salt and pepper.
- Assemble the Casserole: Grease a baking dish, spread the mixture evenly, and top with shredded cheese.
- Bake the Casserole: Bake for 25 minutes, or until cheese is melted and bubbly.
- Let It Rest and Serve: Let it cool for 5 minutes before serving.
