- 1 lb ground beef
- 2 cups potatoes, peeled and diced
- 1 tbsp olive oil
- 1/2 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1 cup shredded cheddar or Mexican blend cheese
- 4 large flour tortillas
- 1/4 cup sour cream (optional)
- 1/4 cup salsa or pico de gallo (optional)
Instructions
- In a skillet, heat olive oil over medium heat. Add diced potatoes and cook until crispy and golden, about 10–12 minutes. Season with salt, pepper, and a pinch of garlic powder.
- In another skillet, cook ground beef over medium heat until browned. Drain excess fat.
- Season beef with chili powder, cumin, garlic powder, salt, and pepper. Stir to combine and cook for 2–3 more minutes.
- Warm tortillas in a dry skillet or microwave until pliable.
- Layer each tortilla with a portion of beef, potatoes, cheese, and optional sour cream and salsa.
- Roll up burritos tightly, folding in sides. Optionally, toast burritos in a pan seam-side down for 1–2 minutes to seal.
- Serve warm with extra salsa or guacamole if desired.
Notes
- Use pre-cooked or leftover roasted potatoes to save time.
- Swap beef for ground turkey, chicken, or a plant-based alternative if preferred.
- Jalapeños or hot sauce can add a spicy kick.
