Description

Cheesy Potato Burritos with Beef are loaded with seasoned ground beef, crispy golden potatoes, gooey cheese, and optional extras like sour cream and salsa. A comforting and filling meal perfect for lunch or dinner.


Ingredients

  • 1 lb ground beef
  • 2 cups potatoes, peeled and diced
  • 1 tbsp olive oil
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar or Mexican blend cheese
  • 4 large flour tortillas
  • 1/4 cup sour cream (optional)
  • 1/4 cup salsa or pico de gallo (optional)


Instructions

  1. In a skillet, heat olive oil over medium heat. Add diced potatoes and cook until crispy and golden, about 10–12 minutes. Season with salt, pepper, and a pinch of garlic powder.
  2. In another skillet, cook ground beef over medium heat until browned. Drain excess fat.
  3. Season beef with chili powder, cumin, garlic powder, salt, and pepper. Stir to combine and cook for 2–3 more minutes.
  4. Warm tortillas in a dry skillet or microwave until pliable.
  5. Layer each tortilla with a portion of beef, potatoes, cheese, and optional sour cream and salsa.
  6. Roll up burritos tightly, folding in sides. Optionally, toast burritos in a pan seam-side down for 1–2 minutes to seal.
  7. Serve warm with extra salsa or guacamole if desired.

  • Use pre-cooked or leftover roasted potatoes to save time.
  • Swap beef for ground turkey, chicken, or a plant-based alternative if preferred.
