- 2 cups diced potatoes (peeled and chopped small)
- 1/2 cup diced onion
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 4 large flour tortillas
- 1/2 cup sour cream or Greek yogurt (optional)
- 1/2 cup salsa or taco sauce (optional)
- 2 tbsp chopped cilantro (optional)
Instructions
- Heat olive oil in a skillet over medium heat. Add diced potatoes and cook until golden and tender, about 12–15 minutes. Stir in diced onion halfway through.
- In another pan, brown the ground beef until no longer pink. Drain excess fat if needed.
- Add cumin, chili powder, paprika, onion powder, salt, and pepper to the beef. Stir well and cook for another 2–3 minutes.
- Combine cooked potatoes with the seasoned beef. Mix in both cheeses while the mixture is still warm so it melts slightly.
- Warm the tortillas in a dry pan or microwave until soft and pliable.
- Divide the cheesy beef-potato mixture evenly between the tortillas. Add optional toppings like sour cream, salsa, and cilantro.
- Fold in the sides and roll each tortilla into a burrito.
- Optional: Toast burritos seam-side down in a skillet for a crisp finish.
