  • 2 cups diced potatoes (peeled and chopped small)
  • 1/2 cup diced onion
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 4 large flour tortillas
  • 1/2 cup sour cream or Greek yogurt (optional)
  • 1/2 cup salsa or taco sauce (optional)
  • 2 tbsp chopped cilantro (optional)


Instructions

  1. Heat olive oil in a skillet over medium heat. Add diced potatoes and cook until golden and tender, about 12–15 minutes. Stir in diced onion halfway through.
  2. In another pan, brown the ground beef until no longer pink. Drain excess fat if needed.
  3. Add cumin, chili powder, paprika, onion powder, salt, and pepper to the beef. Stir well and cook for another 2–3 minutes.
  4. Combine cooked potatoes with the seasoned beef. Mix in both cheeses while the mixture is still warm so it melts slightly.
  5. Warm the tortillas in a dry pan or microwave until soft and pliable.
  6. Divide the cheesy beef-potato mixture evenly between the tortillas. Add optional toppings like sour cream, salsa, and cilantro.
  7. Fold in the sides and roll each tortilla into a burrito.
  8. Optional: Toast burritos seam-side down in a skillet for a crisp finish.
  9. Serve warm and enjoy!
