  • 1 lb chicken breast or strips, thawed and/or uncooked
  • 4 medium potatoes
  • 1 large onion, diced
  • 2 cups cottage cheese
  • 1 cup sour cream
  • 1/2 cup parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 1/2 tsp cayenne
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup cheddar cheese

Instructions

  1. Preheat the oven to 375°F. Coat a 13×9” or 3-quart baking dish with cooking spray or butter.
  2. Peel and cube the potatoes. Boil them in heavily salted water for about 10 minutes, then drain and set aside.
  3. Cut the chicken into 1-inch pieces and set aside.
  4. Dice the onion and mix in a bowl with cottage cheese, sour cream, parmesan cheese, parsley, cayenne, salt, and pepper. Stir to combine.
  5. Add the chicken and potatoes to the mixture and stir everything together. Pour the mixture into the prepared baking dish.
  6. Top with cheddar cheese.
  7. Bake for 25-30 minutes, or until the cheese is bubbly and golden.
