- 1/2 cup cottage cheese (or Greek yogurt)
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup chopped spinach (fresh or thawed frozen)
- 1/2 cup diced bell pepper
- 1/4 cup chopped green onions
- 1/2 cup cooked turkey sausage or ham (optional)
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- Butter or oil for greasing the baking dish
Instructions
- Preheat oven to 375°F (190°C). Lightly grease an 8×8-inch or 9×9-inch baking dish with butter or oil.
- In a large bowl, whisk together eggs, cottage cheese, salt, pepper, and garlic powder.
- Stir in shredded cheddar and mozzarella, then add spinach, bell peppers, green onions, and optional meat.
- Pour mixture into the prepared baking dish and spread evenly.
- Bake for 30–35 minutes, or until the center is set and the top is golden.
- Cool slightly before slicing. Serve warm or store in the fridge for meal prep.
Notes
- Customize with other veggies like mushrooms, tomatoes, or zucchini.
- For more protein, use 1/2 cup egg whites in place of 2 whole eggs.
