Description

Cheesy Pulled Chicken Tacos are a flavorful and comforting meal featuring tender pulled chicken smothered in melted cheese and wrapped in soft tortillas. Perfect for an easy weeknight dinner or casual get-together!

Ingredients

Scale
  • 2 lbs cooked pulled chicken (rotisserie or homemade)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup salsa or taco sauce
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • 8 small flour or corn tortillas
  • Optional toppings: chopped cilantro, diced onions, sliced jalapeños, sour cream, lime wedges

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the pulled chicken, cumin, chili powder, garlic powder, salt, and pepper. Stir well to combine and heat through, about 5 minutes.
  3. Stir in salsa or taco sauce and cook for another 2-3 minutes.
  4. Reduce heat to low and sprinkle both cheeses evenly over the chicken. Cover the skillet and cook until the cheese melts, about 3-5 minutes.
  5. Warm the tortillas in a dry skillet or microwave until pliable.
  6. Assemble the tacos by spooning cheesy pulled chicken onto each tortilla.
  7. Add desired toppings like cilantro, onions, jalapeños, sour cream, and a squeeze of lime.
  8. Serve immediately and enjoy!

Notes

  • Use rotisserie chicken for quick preparation.
  • For extra smoky flavor, add a dash of smoked paprika.
  • Swap out cheeses or use a Mexican cheese blend if preferred.
  • Make it spicy by adding hot sauce or fresh diced chilies.
