Ingredients
Scale
- 2 pounds baby potatoes or russet potatoes, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 packet ranch seasoning mix (or homemade ranch seasoning)
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese (or your favorite cheese)
- 1/4 cup chopped green onions (optional, for garnish)
- 1 tablespoon chopped fresh parsley (optional, for garnish)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup or lightly grease it.
- Prepare Potatoes: Cut the potatoes into 1-inch cubes (or halve the baby potatoes if using). Place the potatoes in a large bowl.
- Season the Potatoes: Drizzle the olive oil over the potatoes and toss to coat evenly. Sprinkle the ranch seasoning mix, garlic powder, onion powder, salt, and pepper over the potatoes, and toss again to ensure the potatoes are fully coated with the seasoning.
- Roast the Potatoes: Spread the seasoned potatoes out in a single layer on the prepared baking sheet. Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy on the outside, and fork-tender on the inside. You can flip them halfway through for even roasting.
- Add Cheese: Once the potatoes are roasted, sprinkle the shredded cheese over the hot potatoes. Return the potatoes to the oven and bake for an additional 3-5 minutes, or until the cheese is melted and bubbly.
- Serve: Remove from the oven and garnish with chopped green onions and parsley if desired. Serve hot as a side dish and enjoy!
Notes
- You can use any type of cheese you prefer. Cheddar is great for a sharp flavor, but mozzarella, Monterey Jack, or a cheese blend will work well too.
- For extra flavor, add a sprinkle of crispy bacon bits on top before serving.
- Make sure to cut the potatoes into uniform sizes for even cooking.
- If you prefer a lighter version, you can reduce the amount of cheese or use a lighter cheese option.
