Ingredients
Scale
- 1 13.5-ounce package smoked sausage, sliced
- 1 teaspoon minced garlic
- 1/2 small onion (about 1/2 cup), finely chopped
- 1 orange bell pepper, finely chopped
- 1 red bell pepper, finely chopped
- 2 cups celery, finely chopped
- 1 32-ounce broth (beef, chicken, or vegetable)
- 1 10-ounce can tomatoes with green chiles (undrained)
- 6 ounces cream cheese, cubed
- 1 1/2 cups shredded cheddar cheese
Instructions
- Brown the Smoked Sausage: In a large stock pot or Dutch oven, brown the sliced smoked sausage over medium heat. Stir occasionally to ensure the sausage is evenly browned. Once browned, drain off any excess grease.
- Sauté the Vegetables: Add the minced garlic, finely chopped onion, bell peppers, and celery to the pot with the sausage. Cook for 5-7 minutes, or until the vegetables are softened and fragrant.
- Add the Tomatoes and Broth: Pour in the undrained can of tomatoes with green chiles and the broth of your choice (beef, chicken, or vegetable). Stir well to combine all the ingredients.
- Simmer the Soup: Lower the heat and allow the soup to simmer for 25 minutes, covered, on low heat. This will allow the flavors to meld together and the vegetables to soften.
- Add the Cheese: Just before serving, stir in the cubed cream cheese and shredded cheddar cheese. Stir continuously until the cheese has fully melted and the soup is creamy.
- Serve: Serve the soup immediately while hot, and enjoy the rich, cheesy goodness!
Notes
- Adjusting Thickness: If you prefer a thicker soup, let it simmer uncovered for a few extra minutes to reduce the liquid. If it’s too thick, you can add more broth to reach your desired consistency.
- Heat Level: The Rotel tomatoes add a bit of spice, but if you prefer a milder soup, you can opt for a can of regular diced tomatoes instead of Rotel.
- Sausage Options: If you prefer a leaner version, you can substitute the smoked sausage with turkey sausage or chicken sausage.
- Cheese Substitutions: You can also substitute the cheddar cheese with other cheeses like Monterey Jack or even pepper jack for a spicier variation.
- Make-Ahead Option: This soup can be made ahead of time and stored in the fridge for 2-3 days. The flavors often get better after sitting for a while.
