Description

This Cheesy Rotel Soup with Smoked Sausage is the ultimate comfort food for cold winter days. With smoky sausage, creamy melted cheese, and a burst of flavor from Rotel tomatoes with green chiles, this hearty soup is easy to make and sure to satisfy. Packed with vegetables and rich, cheesy goodness, it’s the perfect bowl of warmth for family dinners or gatherings.

Ingredients

Scale
  • 1 13.5-ounce package smoked sausage, sliced
  • 1 teaspoon minced garlic
  • 1/2 small onion (about 1/2 cup), finely chopped
  • 1 orange bell pepper, finely chopped
  • 1 red bell pepper, finely chopped
  • 2 cups celery, finely chopped
  • 1 32-ounce broth (beef, chicken, or vegetable)
  • 1 10-ounce can tomatoes with green chiles (undrained)
  • 6 ounces cream cheese, cubed
  • 1 1/2 cups shredded cheddar cheese

Instructions

  • Brown the Smoked Sausage: In a large stock pot or Dutch oven, brown the sliced smoked sausage over medium heat. Stir occasionally to ensure the sausage is evenly browned. Once browned, drain off any excess grease.
  • Sauté the Vegetables: Add the minced garlic, finely chopped onion, bell peppers, and celery to the pot with the sausage. Cook for 5-7 minutes, or until the vegetables are softened and fragrant.
  • Add the Tomatoes and Broth: Pour in the undrained can of tomatoes with green chiles and the broth of your choice (beef, chicken, or vegetable). Stir well to combine all the ingredients.
  • Simmer the Soup: Lower the heat and allow the soup to simmer for 25 minutes, covered, on low heat. This will allow the flavors to meld together and the vegetables to soften.
  • Add the Cheese: Just before serving, stir in the cubed cream cheese and shredded cheddar cheese. Stir continuously until the cheese has fully melted and the soup is creamy.
  • Serve: Serve the soup immediately while hot, and enjoy the rich, cheesy goodness!

Notes

  • Adjusting Thickness: If you prefer a thicker soup, let it simmer uncovered for a few extra minutes to reduce the liquid. If it’s too thick, you can add more broth to reach your desired consistency.
  • Heat Level: The Rotel tomatoes add a bit of spice, but if you prefer a milder soup, you can opt for a can of regular diced tomatoes instead of Rotel.
  • Sausage Options: If you prefer a leaner version, you can substitute the smoked sausage with turkey sausage or chicken sausage.
  • Cheese Substitutions: You can also substitute the cheddar cheese with other cheeses like Monterey Jack or even pepper jack for a spicier variation.
  • Make-Ahead Option: This soup can be made ahead of time and stored in the fridge for 2-3 days. The flavors often get better after sitting for a while.
