Description

A scrumptious delight where gooey cheese meets healthy greens, all snugly nested on a crispy bagel.

Ingredients

Scale
  • 8 oz. cream cheese, softened
  • 1/2 c. finely chopped artichoke hearts
  • 1/2 c. finely chopped spinach
  • 1 c. shredded mozzarella, divided
  • 1/2 c. freshly grated Parmesan
  • 1 garlic clove, minced
  • 1 Tbsp. chopped parsley, plus more for garnish
  • 1/2 tsp. crushed red pepper flakes, plus more for garnish
  • Kosher salt
  • Freshly ground black pepper
  • 2 bagels, halved

Instructions

  • Preheat your oven to 350°F and prepare a baking tray with parchment.
  • In a spacious bowl, blend cream cheese, artichoke hearts, spinach, two-thirds of the mozzarella, Parmesan, garlic, parsley, and red pepper flakes. Season to taste with salt and pepper.
  • Arrange the bagel halves face-up on your prepared tray. Spread the spinach-artichoke blend generously over each.
  • Sprinkle the leftover mozzarella atop the bagels, then bake them until heated through and the cheese is delightfully melted, around 10 to 12 minutes. For an extra crispy top, broil briefly if you wish.
  • Sprinkle with additional parsley and red pepper flakes before serving.

Notes

  • For a spicier version, increase the amount of crushed red pepper flakes.
  • This recipe can be made ahead and stored in the refrigerator before baking.
