  • 12 large dill pickles, whole or sliced lengthwise
  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup shredded mozzarella cheese

  • 1/4 tsp onion powder
  • 1/4 tsp smoked paprika
  • 1/4 tsp black pepper
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • Vegetable oil, for frying
  • Optional: ranch dressing or dipping sauce

Instructions

  1. If using whole pickles, slice them lengthwise into halves or quarters, depending on your preference for stuffing.
  2. In a mixing bowl, combine cream cheese, cheddar cheese, mozzarella cheese, garlic powder, onion powder, paprika, and black pepper. Mix until smooth and creamy.
  3. Using a spoon, carefully stuff each pickle with the cheese mixture. If needed, use your fingers to press the filling inside the pickle halves or quarters, ensuring they are well-packed.
  4. Set up a breading station: Place the flour in one shallow dish, beaten eggs in another, and panko breadcrumbs in a third shallow dish.
  5. Coat each stuffed pickle first in flour, then dip in the beaten egg, and finally coat with panko breadcrumbs. Press down gently to ensure the breadcrumbs stick.
  6. Heat about 1 inch of vegetable oil in a large skillet over medium-high heat. The oil should be hot but not smoking (around 350°F/175°C).
  7. Carefully place the breaded pickles into the hot oil and fry for 2-3 minutes on each side, or until golden brown and crispy.
  8. Remove from the oil and place on a paper towel-lined plate to drain excess oil.
  9. Serve immediately with ranch dressing or your favorite dipping sauce.
