Ingredients
Scale
- 1 pound ground beef
- 1 block (16 ounces) Velveeta cheese, cubed
- 1 package (8 ounces) cream cheese, softened
- 2 cups Fiesta Blend cheese (or a mix of cheddar and Monterey Jack), shredded
- 1 can (10 ounces) Rotel diced tomatoes and green chilies, drained
- 2 tablespoons taco seasoning (homemade or store-bought)
- Tortilla chips or sliced veggies for serving
Instructions
- Brown the Ground Beef: In a large skillet over medium heat, brown the ground beef until fully cooked. Drain any excess grease.
- Melt the Cheeses: In the same skillet, add the cubed Velveeta cheese, softened cream cheese, shredded Fiesta Blend cheese, drained Rotel, and taco seasoning. Stir continuously until the cheeses are melted and the mixture is smooth.
- Adjust Seasoning: Once everything is melted and well combined, taste the dip. If needed, adjust the seasoning. For more heat, add extra taco seasoning or a pinch of cayenne pepper.
- Transfer & Serve: Transfer the cheesy taco dip to a serving bowl, or keep it warm in a slow cooker on the “keep warm” setting.
- Serve: Serve the dip with tortilla chips or sliced veggies for dipping.
- Enjoy: Enjoy the creamy, cheesy taco dip with friends and family!
Notes
- To add extra flavor, try adding some diced jalapeños or a dash of hot sauce for more heat.
- This dip can be made ahead of time and stored in the fridge for up to 3 days. Reheat gently before serving.
- For a vegetarian version, swap the ground beef for black beans or a combination of beans and vegetables.
- If you’re making this for a large crowd, you can double the recipe and keep it warm in a slow cooker.
