- 1.5 lbs baby potatoes, halved or quartered
- 2 tablespoons olive oil
- 1 lb ground beef
- 1 packet taco seasoning (or 2 tablespoons homemade)
- 1/4 cup water
- 1.5 cups shredded cheddar or Mexican blend cheese
- Salt and pepper to taste
- Optional toppings: sour cream, salsa, chopped green onions, diced tomatoes, jalapeรฑos, avocado
Instructions
- Preheat oven to 425ยฐF (220ยฐC). Toss potatoes with olive oil, salt, and pepper. Spread on a baking sheet in a single layer.
- Roast for 25โ30 minutes, flipping halfway through, until golden and crispy.
- Meanwhile, cook ground beef in a skillet over medium heat until browned. Drain excess grease.
- Add taco seasoning and water to beef; stir and simmer for 5 minutes until thickened.
- Remove roasted potatoes from the oven and top with taco beef.
- Sprinkle cheese over the top and return to oven for 5โ7 minutes, until cheese is melted and bubbly.
- Remove from oven and add desired toppings before serving.
Notes
- Swap ground beef for ground turkey or plant-based meat for variation.
- Use sweet potatoes for a healthier twist.
