Description

A delicious and hearty dish featuring crispy roasted potatoes topped with seasoned taco beef, melted cheese, and your favorite taco toppings.


Ingredients

  • 1.5 lbs baby potatoes, halved or quartered
  • 2 tablespoons olive oil
  • 1 lb ground beef
  • 1 packet taco seasoning (or 2 tablespoons homemade)
  • 1/4 cup water
  • 1.5 cups shredded cheddar or Mexican blend cheese
  • Salt and pepper to taste
  • Optional toppings: sour cream, salsa, chopped green onions, diced tomatoes, jalapeรฑos, avocado

Instructions

  1. Preheat oven to 425ยฐF (220ยฐC). Toss potatoes with olive oil, salt, and pepper. Spread on a baking sheet in a single layer.
  2. Roast for 25โ€“30 minutes, flipping halfway through, until golden and crispy.
  3. Meanwhile, cook ground beef in a skillet over medium heat until browned. Drain excess grease.
  4. Add taco seasoning and water to beef; stir and simmer for 5 minutes until thickened.
  5. Remove roasted potatoes from the oven and top with taco beef.
  6. Sprinkle cheese over the top and return to oven for 5โ€“7 minutes, until cheese is melted and bubbly.
  7. Remove from oven and add desired toppings before serving.
