- 4 medium ripe tomatoes, sliced
- 1 teaspoon salt (for drawing moisture from tomatoes)
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1/2 cup mayonnaise
- 1/4 cup chopped fresh basil
- 1/4 cup chopped green onions
- 1 clove garlic, minced
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil (optional, for brushing crust)
Instructions
- Preheat oven to 375°F (190°C).
- Place sliced tomatoes on paper towels and sprinkle with salt. Let sit for 20–30 minutes to draw out excess moisture, then pat dry.
- Blind bake the pie crust for 10 minutes, then let cool slightly.
- In a small bowl, mix the mayonnaise, mozzarella, cheddar, garlic, basil, green onions, and black pepper until combined.
- Layer half of the tomato slices in the pie crust. Spread half of the cheese mixture over the tomatoes.
- Repeat with remaining tomato slices and cheese mixture.
- Bake for 30–35 minutes, or until the top is golden and bubbly. Optional: brush the crust with olive oil before baking for extra crispiness.
- Let cool for 10 minutes before slicing. Serve warm or at room temperature.

- Use heirloom or vine-ripened tomatoes for the best flavor and texture.
