For the Cherry Amaretto Layer:

For the Tiramisu:

  • 24 ladyfinger biscuits (savoiardi)
  • 1/2 cup strong brewed coffee, cooled
  • 2 tablespoons amaretto liqueur
  • Cocoa powder, for dusting (optional)
  • Shaved chocolate or chocolate curls (optional, for garnish)

Instructions

  1. Prepare the Cherry Amaretto Layer: In a medium saucepan, combine the cherries, amaretto, sugar, and lemon juice. Cook over medium heat, stirring occasionally, for about 5-7 minutes, or until the cherries soften and the syrup thickens. Remove from heat and let it cool.
  2. Prepare the Mascarpone Cream: In a large mixing bowl, whisk the mascarpone cheese, heavy cream, powdered sugar, vanilla extract, and amaretto liqueur until smooth and creamy. You can use an electric mixer to speed up the process. Whisk until soft peaks form.
  3. Assemble the Tiramisu: In a shallow dish, combine the cooled coffee and amaretto liqueur. Quickly dip each ladyfinger into the coffee mixture, making sure they are soaked but not soggy, and arrange them in a single layer in the bottom of a 9×9-inch or similar-sized serving dish.
  4. Layer the Tiramisu: Spread half of the mascarpone cream over the ladyfingers, smoothing it into an even layer. Spoon half of the cherry amaretto mixture over the cream. Repeat the layers with the remaining ladyfingers, mascarpone cream, and cherry amaretto mixture.
  5. Chill: Cover the tiramisu with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the dessert to firm up.
