Description

This Cherry Chocolate Chip Ice Cream Pie is the ultimate indulgence! With a creamy ice cream filling, a crunchy graham cracker crust, and a swirl of sweet cherries and chocolate chips, it’s the perfect dessert for any occasion, especially Valentine’s Day.

Ingredients

Scale

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted

For the Ice Cream Filling:

  • 2 cups cherry ice cream, softened
  • 1 cup vanilla ice cream, softened
  • 1/2 cup mini chocolate chips
  • 1/2 cup chopped cherries (fresh or maraschino)
  • 1/4 cup chocolate fudge sauce (optional, for drizzling)

For Garnish:

  • Whipped cream (optional)
  • Chocolate shavings (optional)
  • Extra maraschino cherries (optional)

Instructions

  1. Prepare the Crust:
    • Preheat your oven to 350°F (175°C).
    • In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined.
    • Press the mixture into the bottom and sides of a 9-inch pie dish to form the crust.
    • Bake for 8-10 minutes, or until lightly golden. Remove from the oven and let it cool completely.
  2. Prepare the Ice Cream Filling:
    • In a large bowl, mix together the softened cherry ice cream and vanilla ice cream until smooth and well combined.
    • Stir in the mini chocolate chips and chopped cherries. Mix until evenly distributed.
  3. Assemble the Pie:
    • Once the graham cracker crust has cooled, spoon the ice cream mixture into the crust. Spread it out evenly with a spatula.
    • Drizzle with chocolate fudge sauce if desired for extra richness.
    • Freeze the pie for at least 4 hours, or until the ice cream is firm and set.
  4. Serve and Garnish:
    • Once the pie is ready to serve, garnish with whipped cream, chocolate shavings, and extra maraschino cherries if desired.
    • Slice and enjoy!

Notes

  • You can substitute the cherry ice cream with a different flavor, but cherry pairs beautifully with chocolate chips.
  • If you want to make the pie extra decadent, add more chocolate fudge sauce on top before serving.
