Ingredients
Scale
For the Muffins:
- 1 ½ cups all-purpose flour
- ¾ cup granulated sugar
- 2 tsp baking powder
- ¼ tsp baking soda
- ¼ tsp salt
- ½ tsp ground cinnamon
- 1 large egg
- ½ cup whole milk
- ¼ cup unsalted butter, melted
- 1 tsp vanilla extract
- 1 ½ cups fresh or frozen cherries, pitted and chopped (or use canned cherries, drained)
For the Topping:
- ¼ cup all-purpose flour
- ¼ cup granulated sugar
- 2 tbsp unsalted butter, cold and cut into small pieces
- ¼ tsp ground cinnamon
Instructions
-
Preheat the Oven:
- Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it.
-
Make the Muffin Batter:
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
- In another bowl, whisk together the egg, milk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- Gently fold in the chopped cherries.
-
Prepare the Topping:
- In a small bowl, combine the flour, sugar, cinnamon, and cold butter. Use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
-
Assemble the Muffins:
- Divide the muffin batter evenly among the muffin cups, filling each about 2/3 full.
- Sprinkle the cobbler topping evenly over each muffin.
-
Bake:
- Bake for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
-
Serve:
- Serve warm or at room temperature. Enjoy the perfect balance of soft muffin and crunchy cobbler topping!
Notes
- Fresh or frozen cherries work best, but if using canned cherries, be sure to drain them well before adding to the batter.
- If you want an extra touch, you can drizzle the muffins with a simple glaze made from powdered sugar and milk.
- These muffins are perfect for breakfast, brunch, or even as a sweet treat for afternoon tea.
