Description

These Cherry Cobbler Muffins combine the best of both worlds—tender muffins with a buttery, cobbler-like topping and bursts of sweet cherries. Perfect for breakfast, brunch, or a delicious snack!

Ingredients

Scale

For the Muffins:

  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ tsp ground cinnamon
  • 1 large egg
  • ½ cup whole milk
  • ¼ cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1 ½ cups fresh or frozen cherries, pitted and chopped (or use canned cherries, drained)

For the Topping:

  • ¼ cup all-purpose flour
  • ¼ cup granulated sugar
  • 2 tbsp unsalted butter, cold and cut into small pieces
  • ¼ tsp ground cinnamon

Instructions

  1. Preheat the Oven:

    • Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it.
  2. Make the Muffin Batter:

    • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
    • In another bowl, whisk together the egg, milk, melted butter, and vanilla extract.
    • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
    • Gently fold in the chopped cherries.
  3. Prepare the Topping:

    • In a small bowl, combine the flour, sugar, cinnamon, and cold butter. Use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
  4. Assemble the Muffins:

    • Divide the muffin batter evenly among the muffin cups, filling each about 2/3 full.
    • Sprinkle the cobbler topping evenly over each muffin.
  5. Bake:

    • Bake for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
    • Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  6. Serve:

    • Serve warm or at room temperature. Enjoy the perfect balance of soft muffin and crunchy cobbler topping!

Notes

  • Fresh or frozen cherries work best, but if using canned cherries, be sure to drain them well before adding to the batter.
  • If you want an extra touch, you can drizzle the muffins with a simple glaze made from powdered sugar and milk.
  • These muffins are perfect for breakfast, brunch, or even as a sweet treat for afternoon tea.
