Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Make the Cookie Dough:
    • In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
    • Beat in the egg, vanilla extract, and almond extract until well combined.
    • In a separate bowl, whisk together the flour, baking soda, and salt.
    • Gradually add the dry ingredients to the wet ingredients, mixing until combined.
    • Gently fold in the chopped cherries, cherry juice (if using), and white or semi-sweet chocolate chips (if using).
  3. Scoop the Cookies:
    • Using a cookie scoop or a tablespoon, drop rounded balls of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
    • Flatten each ball of dough slightly with the back of a spoon or your fingers.
