Ingredients
Scale
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp almond extract
- 2 1/4 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup maraschino cherries, drained and chopped (or fresh cherries, chopped)
- 1/4 cup maraschino cherry juice (optional, for added flavor)
- 1/2 cup white chocolate chips or semi-sweet chocolate chips (optional)
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Make the Cookie Dough:
- In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the egg, vanilla extract, and almond extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until combined.
- Gently fold in the chopped cherries, cherry juice (if using), and white or semi-sweet chocolate chips (if using).
- Scoop the Cookies:
- Using a cookie scoop or a tablespoon, drop rounded balls of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Flatten each ball of dough slightly with the back of a spoon or your fingers.
- Bake the Cookies:
- Bake for 10-12 minutes, or until the edges are lightly golden, and the centers are set. The cookies will firm up as they cool.
- Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Serve and Enjoy:
- Once cooled, enjoy these soft, chewy Cherry Cookies with a glass of milk or your favorite beverage!
Notes
- If you prefer to use fresh cherries, be sure to remove the pits and chop them into small pieces.
- For a more intense cherry flavor, you can add extra maraschino cherry juice to the dough or drizzle some over the cookies after baking.
- These cookies also pair wonderfully with a drizzle of chocolate or a sprinkle of powdered sugar for added flair.
