- 1/2 cup powdered sugar
- 2 tbsp milk
- 1/4 tsp vanilla extract
Instructions
- Prepare the Cookie Dough: In a medium bowl, whisk together the flour, baking powder, and salt. In a separate bowl, cream the cold cubed butter and granulated sugar together using an electric mixer until light and fluffy, about 2-3 minutes. Add the egg and vanilla extract, and beat until combined. Gradually add the dry ingredients and mix until a dough forms. If the dough is too dry, add milk, one tablespoon at a time, until it holds together.
- Chill the Dough: Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to allow it to firm up.
- Make the Cherry Filling: In a small bowl, mix the cherry preserves with cornstarch (if using) to thicken the filling. Set aside.
- Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Shape the Cookies: Roll out the chilled dough on a floured surface to about 1/4-inch thickness. Use a round cookie cutter to cut out circles. Place half of the circles on the prepared baking sheet. Add a small spoonful of the cherry filling in the center of each circle (about 1 tsp), then top with another dough circle. Use a fork to press down the edges to seal.
- Bake: Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden brown. Remove from the oven and let cool on a wire rack.
- Optional Glaze: In a small bowl, whisk together the powdered sugar, milk, and vanilla extract to make a glaze. Drizzle the glaze over the cooled cookies for extra sweetness.
