Description

These Cherry Pie Cookies are a delicious combination of buttery, flaky cookie dough and sweet, tart cherry filling. Perfect for any occasion, these cookies offer all the flavor of a cherry pie in a bite-sized treat!

Ingredients

Scale

For the Cookie Dough:

  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, cold and cut into cubes
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 23 tbsp milk (as needed)

For the Cherry Filling:

  • 1 cup cherry preserves or jam
  • 1 tbsp cornstarch (optional, to thicken the filling)

For the Glaze (optional):

  • 1/2 cup powdered sugar
  • 2 tbsp milk
  • 1/4 tsp vanilla extract

Instructions

  1. Prepare the Cookie Dough: In a medium bowl, whisk together the flour, baking powder, and salt. In a separate bowl, cream the cold cubed butter and granulated sugar together using an electric mixer until light and fluffy, about 2-3 minutes. Add the egg and vanilla extract, and beat until combined. Gradually add the dry ingredients and mix until a dough forms. If the dough is too dry, add milk, one tablespoon at a time, until it holds together.
  2. Chill the Dough: Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to allow it to firm up.
  3. Make the Cherry Filling: In a small bowl, mix the cherry preserves with cornstarch (if using) to thicken the filling. Set aside.
  4. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  5. Shape the Cookies: Roll out the chilled dough on a floured surface to about 1/4-inch thickness. Use a round cookie cutter to cut out circles. Place half of the circles on the prepared baking sheet. Add a small spoonful of the cherry filling in the center of each circle (about 1 tsp), then top with another dough circle. Use a fork to press down the edges to seal.
  6. Bake: Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden brown. Remove from the oven and let cool on a wire rack.
  7. Optional Glaze: In a small bowl, whisk together the powdered sugar, milk, and vanilla extract to make a glaze. Drizzle the glaze over the cooled cookies for extra sweetness.
  8. Serve: Serve the Cherry Pie Cookies as a sweet snack or dessert. Enjoy!

Notes

  • You can use fresh or frozen cherries to make your own cherry filling if preferred, though preserves or jam are the easiest option.
  • Store cookies in an airtight container at room temperature for up to 4 days.
  • For an extra touch, add a sprinkle of powdered sugar on top after glazing.
