Description

Chex Scotcheroos are a sweet and crunchy treat made with Chex cereal, peanut butter, and a delicious chocolate and butterscotch topping. Perfect for any occasion, these bars are easy to make and sure to be a crowd-pleaser!


Ingredients

  • 6 cups rice or corn Chex cereal
  • 1 cup light corn syrup
  • 1 cup sugar
  • 1 ½ cups peanut butter
  • 2 cups semi-sweet chocolate chips
  • 2 cups butterscotch chips
  • ½ cup peanut butter (for topping)
  • 1 teaspoon vanilla extract

Instructions

  • Grease a large round bowl and pour the cereal into it. Set aside.
  • Grease a 9×13-inch pan and set aside.
  • In a pan over medium-high heat, combine the corn syrup and sugar. Stir constantly until it comes to a boil.
  • Immediately remove the mixture from heat and stir in 1 ½ cups of peanut butter until smooth.
  • Pour the mixture over the cereal and fold it in gently. Pour into the prepared 9×13 pan and spread evenly.
  • In a microwave-safe measuring cup, combine the semi-sweet chocolate chips, butterscotch chips, ½ cup peanut butter, and vanilla extract.
  • Microwave in 30-second intervals, stirring well after each interval, until the mixture is completely melted and smooth (about 1 minute and 30 seconds).
  • Pour the melted mixture over the bars and spread evenly.
  • Allow the bars to cool completely at room temperature before cutting into squares.
