- 12 lasagna noodles
- 2 cups cooked chicken, shredded
- 2 cups ricotta cheese
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cups Alfredo sauce (store-bought or homemade)
- 1 tsp garlic powder
- 1/2 tsp dried Italian seasoning
- Salt and pepper, to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Cook the Noodles: Cook the lasagna noodles according to the package instructions. Drain and set aside to cool slightly.
- Prepare the Filling: In a bowl, combine the shredded chicken, ricotta cheese, 1 cup mozzarella, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Mix well.
- Assemble the Rolls: Preheat the oven to 375°F (190°C). Spread a thin layer of Alfredo sauce on the bottom of a baking dish. Place a cooked lasagna noodle on a flat surface, then spread about 2-3 tablespoons of the chicken mixture along the noodle. Roll it up tightly and place it seam-side down in the baking dish. Repeat with the remaining noodles.
- Top and Bake: Pour the remaining Alfredo sauce over the lasagna rolls, then sprinkle with the remaining mozzarella cheese. Cover with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is golden and bubbly.
- Serve: Garnish with fresh parsley if desired, and serve hot.
Notes
- You can use rotisserie chicken to save time.
- For a lighter version, swap the ricotta for a low-fat option or use part-skim mozzarella.
- You can make the lasagna rolls ahead of time and refrigerate them until ready to bake.
