1/4 cup fresh cilantro, chopped (optional)
-
1/2 cup shredded lettuce
-
1/2 cup diced tomatoes
-
1/4 cup red onion, thinly sliced (optional)
-
Salsa or hot sauce (optional)
Instructions
-
Cook the Chicken:
-
Heat olive oil in a large skillet over medium heat.
-
Season the chicken breasts with chili powder, cumin, garlic powder, onion powder, smoked paprika (if using), salt, and pepper.
-
Add the chicken to the skillet and cook for about 6-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (75°C).
-
Remove the chicken from the skillet and let it rest for a few minutes. Slice it into thin strips and drizzle with lime juice.
-
-
Prepare the Burritos:
-
Warm the flour tortillas in a dry skillet or microwave for 10-15 seconds to make them more pliable.
-
Lay each tortilla flat on a plate.
-
In the center of each tortilla, add a few slices of avocado, some chicken strips, shredded cheese, and a dollop of sour cream or Greek yogurt (if using).
-
-
Add Fresh Veggies:
-
Top with shredded lettuce, diced tomatoes, red onion (if using), and fresh cilantro.
-
-
Roll the Burritos:
-
Carefully fold in the sides of the tortilla, then roll it up tightly from the bottom to form a burrito.
-
-
Serve:
-
Serve immediately with salsa or hot sauce on the side for extra flavor.
-
Notes
-
For added flavor, you can grill the chicken breasts instead of pan-searing them.
-
You can add other toppings like jalapeños, black beans, or corn for a more hearty burrito.
-
If you prefer a spicier version, add some diced jalapeño or a drizzle of hot sauce to the burrito filling.
