Chicken and Avocado Quesadillas are a delicious and hearty meal featuring seasoned chicken, creamy avocado, and melted cheese, all grilled in a crispy tortilla. Perfect for a quick lunch or dinner!

- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- 2 ripe avocados, peeled, pitted, and mashed
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 4 large flour tortillas
- 1/4 cup fresh cilantro, chopped (optional)
- 1 tbsp lime juice (optional, for the avocado)
- Sour cream and salsa for serving (optional)
Instructions
- Season the chicken breasts with cumin, chili powder, garlic powder, onion powder, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat. Cook the chicken breasts for 6-7 minutes per side or until fully cooked and golden brown on the outside. Remove from the pan and let rest for a few minutes before slicing into thin strips.
- While the chicken is resting, mash the avocados in a bowl and add lime juice (if using) and a pinch of salt. Mix until creamy.
- Heat a large non-stick skillet or griddle over medium heat. Place one tortilla in the skillet and sprinkle with half of the shredded cheddar and mozzarella cheeses.
- Layer half of the sliced chicken on top of the cheese, followed by half of the mashed avocado and cilantro (if using). Place the second tortilla on top to form a sandwich.
- Cook for 2-3 minutes per side, pressing gently with a spatula, until the cheese is melted and the tortillas are golden and crispy. Repeat with the second set of tortillas, chicken, cheese, and avocado.
- Remove the quesadillas from the skillet and cut them into wedges. Serve immediately with sour cream and salsa on the side, if desired.
Notes
- You can use rotisserie chicken for a quicker version of this recipe.
- If you prefer spicier quesadillas, add some diced jalapeños to the chicken or the avocado mixture.
- For a lower-carb option, use low-carb tortillas or lettuce wraps.
- Feel free to add sautéed onions, bell peppers, or other vegetables for extra flavor and texture.
